Pumpkin Casserole
Ingredients:
1-1/2 pound fresh pumpkin
1 large onion, chopped
1/2 teaspoon salt
1/4 teaspoon white pepper
2 tablespoons melted unsalted butter
2 eggs
3/4 cups milk
3/4 cups Farmers Cheese

Directions:
Pre-heat oven to 375 degrees.
Peel and discard outer skin of the pumpkin.
Cut pumpkin into 1/4-inch slices and place in a mixing bowl.
Add onion, salt, pepper and butter and toss well.
Pour into a greased baking dish, cover with foil and
bake for 30 minutes.
Meanwhile, beat eggs, milk and cheese together until smooth.
Remove baking dish from the oven, pour the cheese mixture over the top.
Bake uncovered, another 20 minutes until golden brown.
