Ingredients:
3 eggs
2 tablespoon milk
1 tablespoon safflower oil
1/4 cup cooked spinach
2 tablespoons grated cheddar

Directions:
Beat the eggs and milk in a bowl. Place the oil in a small skillet and heat. Add
the egg mixture and cook for 2 minutes. Add the spinach and sprinkle with
cheese. Fold omelets in half. Cook until egg is done thoroughly. Cut into
pieces. Serve warm not hot.
