Blueberry Millet Muffins for
2 cups flour
3 teaspoons baking powder
1/4 cup sugar
1 egg, slightly beaten
1 cup apple juice
3 tablespoons melted butter
1 cup blueberries
1/4 cup millet seeds
Reserve 1/4 cup flour and sprinkle over well drained blueberries, (fresh berries or thawed and well drained frozen)
Combine flour,baking powder,,sugar, seeds and crushed eggshells in a large bowl.
Add egg, apple juice and melted butter.
Mix until smooth. Gently fold in blueberries.Bake in greased muffin tins at 325 degrees for 20-25 minutes. Cool slightly and
remove from pans. When cool, freeze in Ziplocs, thaw as needed.
This is a wonderful recipe for family blueberry muffins. To make a batch just for yourself, omit bird seed,
eggshells, increase melted butter to
1/4 cup and sugar to 1/2 cup. Sprinkle a mixture of cinnamon and sugar over muffins before baking. Better yet, make a
batch for yourself and a batch for your bird so you can share.Enjoy!
