Gingerbread for Birds

Ingredients:

3/4 cups whole wheat flour
1-1/2 cup white flour
1 teaspoon baking soda
1/2 cup chopped dried fruit
1/2 cup unsweetened applesauce
1/3 cup dark molasses
1 teaspoon cinnamon
1/4 teaspoon ginger
1 teaspoon vanilla
1 egg

Directions:

Mix all wet ingredients with a wooden spoon.Add baking soda and mix well. Gradually add flours and mix with hands.Adjust amount of flour if necessary until blended into a still dough. Roll into balls, then flatten with the bottom of a glass dipped in flour. Place on lightly greased cookie sheet.Bake at 325 degrees for 10 to 15 minutes until no thumbprint remains. Cool on wire racks and serve. Crumble into small pieces for smaller birds. Freeze in Ziplocs and thaw as needed.

If a crisper,harder cookie is desired,bake longer.
